Biological Activity of Prebiotics and Their Research Progress in Functional Foods

Abstract: Prebiotics are a type of organic matter that are not digested and absorbed by the host but can selectively promote the growth and reproduction of beneficial bacteria such as Bifidobacteria in its body,thereby improving the host’s health.This article systematically summarizes the main progress in the research of prebiotics andtheir functions,witha focuson discussng the physicochemical properties,biological activities and physiological functions of prebiotics,and summarizes the current application status of prebiotics infunctional fods.Onthis basis, the main challenges and research prospects currently faced by the development of prebiotics are analyzed, with he expectation of promoting the further application of prebiotics in functional foods.
