Abstract: This paper expounds the important role of food safety sampling in ensuring food quality and safety, promoting the quality improvement of food enterprises,and constructing a food quality and safety information system,analyzes the key risks existing in sampling,and proposes corresponding optimization strategies,including optimizing the design of sampling plans,standardizing the operation of sampling process,and improving the application value of sampling results,aiming to provide reference for improving the effectivenessand scientificity of food safety sampling.
