Abstract: As a food category that is loved byconsumers, the taste,flavor, shelf life,color and other quality characteristics of pastries are closely related to the use of food aditives. With the improvement of residents' living standards,consumers’demand for pastries continues to increase,and the safety of food aditives has also become a focus of social attention.This article mainly discusses the current status offood additives used by pastry manufacturers,analyzes their safety issues from the perspectives ofregulations and standards,enterprise management, and testing technology,and proposescorresponding solutions, in order to provideareference for improving the safety of pastry foods and promote the healthy and sustainable development of the industry.
