Abstract:Asimportantcomponentof thefruitsoffruit vegetables,unsaturatedfattyacidswidelyinvolvedinvarious physiological proceses,including growthanddevelopment,fruit quality formation and stressresistance.Theircontent andcompositionvarydependingon factors such ascrop species,cultivation techniques,environmentalconditions and fruit postharvest treatment.Thecontent and type of unsaturated fattyacids not onlyafect growth and development proce,butalsoaffecttheformationoffruitqualityspeciallplayinganimportantroleinthecontentandtypeofomatic substances,suchasaldehydes,alcoholsandesters.This reviewmainlysummarizesrecentresearchontheimpactofunsaturated fattyacidsonthe growthanddevelopmentoffruitvegetables,aswellastheregulationprocessof thecontentand type of unsaturated fatyacidsaffcting the metabolismoffruit aroma compounds,inorder to laya foundation for he growth and development of fruit vegetables and the improvement of fruit quality.
