Study on Multiple Analytical Methods for Detection of Harmful Substances in Food

Abstract: With the increasing attention of people to food safety,it is very important to detect harmful substances in food accuratelyand efficiently.In this paper,the principle and application of thesingle detection technologyofcommon harmfulsubstances infood,suchastotalarsenic,benzopyrene,nitrite,etc.,suchasanalytical chromatographic detection technology,spectral detection technology and immunoanalysis technology are described in detail. On this basis,theconstruction basis of multipleanalysis methods was discussed,including the feasibility of technology combination and the principle and method of data fusion.Combined with examples,the application of chromatography-mass spectrometry,spectroscopy-chromatographyand the combination strategy of immunoassay and other technologies in the detection offood harmful substances was introduced.Theresearch shows thatthe multianalysis method can significantly improve the accuracy,sensitivity and eficiency of the detection,and provide more powerful technical support for food safety detection.
