食品中有機磷農藥殘留檢測技術研究

摘 要:有機磷農藥殺蟲譜寬、藥效明顯,可極大地提高農作物產量,保證糧食豐產豐收。但是,農藥的過度使用會導致其在農作物表面、土壤和水源中殘留,經過食物鏈進入人體后,會對神經系統(tǒng)中的乙酰膽堿酯酶產生抑制作用,造成乙酰膽堿代謝紊亂,損害人體健康。因此,有必要對食品中有機磷農藥殘留的檢測方法進行研究。

Abstract: Organophosphorus pesticides have wide insecticidal spectrum and obvious efficacy, which can greatly improve crop yield and ensure grain harvest. However, the overuse of pesticides will lead to residues on the surface of crops, soil and water sources, and after entering the human body through the food chain, it will inhibit theacetylcholinesterase in the nervous system, resulting in the disorder of acetylcholine metabolism and damage human health. Therefore, it is necessary to study the detection methods of organophosphorus pesticide residues in food.
