動物性海產(chǎn)品中鎘風(fēng)險評估研究現(xiàn)狀

摘 要:鎘可對腎臟、肝臟、骨骼等造成損害,鎘膳食暴露已成為國際關(guān)注的熱點。本文通過回顧2011—2023年發(fā)表的相關(guān)文獻,歸納總結(jié)動物性海產(chǎn)品中鎘膳食暴露風(fēng)險評估方法及評價結(jié)果,以期為動物性海產(chǎn)品中鎘風(fēng)險評估提供參考。

Research Status on Risk Assessment of Cadmium in Animal Seafood

Abstract: Cadmium can cause damage to kidney, liver, bones, etc., and dietary exposure to cadmium has become a hot topic of international concern. In this paper, the risk assessment methods and evaluation results of dietary exposure to cadmium in animal seafood were summarized by reviewing the relevant literature published from 2011 to 2023, in order to provide reference for the risk assessment of cadmium in animal seafood.
