Application of Licorice Products in Food

Abstract: Liquorice has been listed as food and medicine homologous products in many countries and regions of the world, and its extract has been used as a good sweetener, flavoring agent, food antioxidant, emulsifier and so on. It is used in candy, jelly, beverages, soy sauce, cakes and other food. This paper discusses and summarizes the application of licorice and its products in food industry of different countries and regions.
