基于代謝組學(xué)分析冷藏大黃魚品質(zhì)劣變機(jī)制

Abstract:Using metabolomics,this studyexplored therelationshipbetweenthequalitydeteriorationand the metabolic changes in refrigerated large yellow croaker (Larimichthys crocea) during refrigeration. Keydiferential metabolites associated with quality deteriorationacross fish samples afterO,9,and18 days ofrefrigeration were identified by gas chromatography-quadrupole-time-of-flight massspectrometry,and the metabolic pathways in which the differential metabolites may be involved were analyzed.The results showed thatas refrigeration time increased,the types and contentsof metabolites such asaminoacids,carbohydrates,and nucleotides significantly changed in largeyellowcroaker muscle.The diferential metabolites were primarily concentrated in amino acid metabolism pathways,such as arginine and proline metabolism;glycine,serine,and threonine metabolism;and cysteine and methionine metabolism.Proline, glutamate,isoleucine,glycine,methionine,tyrosine,valine,guanosine,uracil,ribose,thymidine,xanthine,and 5′ -inosine monophosphate were identified as key differential metabolites.The degradation of amino acids and the generation of biogenicamines were closelyrelated tothe decline inthe freshnessand shelf lifeoflarge yellow croaker,while the degradation of nucleotide substanceswasrelated to thedecreasein the taste.
