Abstract:Muton is widelylovedbyconsumers foritshighcontentofhigh-qualityprotein,lowcholesterolcontentand uniqueflavor. Cholesterol synthesis and itsregulatory mechanismareoneofthe important factors that determine mutton quality.Thispapereviewsthecontent,distributioncharacteristics,biologicalfunctions,quantitativemethodsofcolesterol in muton and providesasystematic summaryofthefactors (breed,feeding and management,ageand gender)affecting the cholesterolcontent inmutonaswellas thesythesisandregulatory mechanismsofcholesterol,with theaimof providinga theoretical basisand technical support for the developmentofhigh-quality,low-cholesterol mutton products.
