摘 要:本文分析了白酒生產(chǎn)過(guò)程中原料處理、發(fā)酵、蒸餾、儲(chǔ)存及包裝各環(huán)節(jié)的微生物污染問(wèn)題。針對(duì)不同環(huán)節(jié)的污染特點(diǎn),提出了優(yōu)化原料管理、加強(qiáng)環(huán)境控制、規(guī)范操作流程等防治對(duì)策,以有效解決微生物污染問(wèn)題。

Abstract: This paper analyzes the microbial contamination problems in the raw material processing, fermentation, distillation, storage and packaging of Baijiu production. According to the pollution characteristics of different links, prevention and control measures such as optimizing raw material management, strengthening environmental control, and standardizing operating procedures are proposed to effectively solve the problem of microbial contamination.
